Method for preserving sweet cream indefinitely discovered by Government expert. Washington, D.C., Jan. 26. Dairymen the world over will benefit from a method discovered by Owen E. Williams, of the Bureau of Dairy Industry, U.S. Department of Agriculture, whereby sweet cream can be preserved indefinitely in sodium chloride, common table salt. To 100 pounds of cream testing 40 per cent butterfat, 7 pounds of salt are added. When the cream is to be delivered once a week from the farm to the creamery, enough salt is placed in the cream jar at the beginning of the week to preserve the week's supply. As more cream is added after each milking, it must be carefully mixed with the salt solution already in the jar. The salt prevents souring and acts as an anti-freeze. To remove the salt, Williams dilutes the thick cream with fresh skim milk and runs the mixture through an ordinary cream separator. The cream may then be used as coffee cream or it may be used in the manufacture of sweet cream butter or in the manufacture of ice cream. 1. Mr. Williams weighs out 7 pounds of sodium chloride - common table salt - which is sufficient to preserve 100 pounds of 40 per cent cream, 1/26/39
